In Denmark we eat a lot of rye bread, which is absolutely delicious. However, this recipe for bread is an alternative to the standard rye bread, seeing that this doesn’t contain any gluten nor starch. Instead the bread contains a whole lot of nuts and seeds.
INGREDIENTS (1 bread)
200 g sunflower seeds
200 g pumpkin seeds
200 g sesame seeds
200 g flaxseeds
200 g almonds
200 g walnuts
10 eggs
1 dl olive oil (avocado oil works well too)
2 tsp salt
APPROACH
Blend the almonds so that they resemble flour, and chop the walnuts roughly (I also blend some – approx. 40% – of the walnuts very finely together with the almonds: this gives a better texture of the bread). Lastly, mix all of the ingredients in a bowl.
Pour in the mixture in a bread form lined with baking paper, and bake the bread in a preheated oven at 160 degrees for approx. 1 hour – it’s THAT easy!
